Spinach and potato curry

1 onion, chopped
1/2 cup water
6 potatoes, cubed
1 can coconut milk
2 tablespoons curry powder
2 teaspoons sugar
2 teaspoons garlic powder
1 1/2 teaspoons salt
1–2 teaspoons garam masala
1 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1–2 10 ounce packages fresh or frozen spinach 

Sauté onion in water. Add potatoes, coconut milk, and spices. Simmer about 20 minutes, until potatoes are nearly cooked. Add spinach and simmer until fully thawed/cooked.
