Tomato-avocado pasta salad


16 ounces pasta (fusilli or rotini are nice)
8–10 tomatoes, diced
1 bunch green onions, sliced, or 1/2 an onion, minced

2 avocados
1/2 cup white vinegar
2 tablespoons grainy mustard
2 tablespoons balsamic vinegar
2 teaspoons sugar or other sweetener
1 1/2 teaspoons salt
several grinds black pepper

Cook pasta and place in bowl with tomatoes and onions. Whizz remaining ingredients together in food processor or blender. Add to salad; mix well.

Serves 6 as a main dish
