Garlic alfredo sauce

1 onion, chopped (1.5 cups)
1–2 cups vegetable broth
1/2 teaspoon salt
1/4 teaspoon pepper
3–4 garlic cloves
2/3 cup cashews
1 tablespoon lemon juice
1/4 cup nutritional yeast

Simmer onion and garlic in 1 cup vegetable broth until broth is almost gone. Blend together all ingredients with 3/4 cup vegetable broth, adding more as necessary.
