Chili

1 onion, chopped
1–3 celery stalks, chopped
1 bell pepper, chopped (or 2 tablespoons dehydrated)
1 8-ounce can tomato sauce
1 14-ounce can diced tomatoes
2 14-ounce cans beans, drained and rinsed
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon oregano


Sauté onion, celery, and pepper. Add remaining ingredients plus 1 cup water. Simmer 30–60 minutes.
